The Maker


Our bread proofing baskets are crafted by the hands of skilled artisans in Phu Vinh, a 400-year-old village nestled 25 kilometers outside of Hanoi, Vietnam. This region has built a foundation on bamboo and rattan artisanship, with the handcrafting of these materials being the skills that have gotten them through tough and happy times alike.

Made from carefully processed natural cane material and held together with sturdy stainless steel tacks, every one of our bannetons is made with natural ingredients, just like the bread you bake.

In case you'd like to know more about Banneton and Proofing (Baking technique):

Banneton, borrowed from French banneton(originated from "banne", meaningwicker basket),is also called proofing basket or brotform (plural brotformen) in German (please read the definition here). Of German origin, the brotform supports the dough as it proofs and prevents shaped loaves spreading out in the proving times when the gluten relaxes.

It has become one of the necessary baking equipments to manipulate the speed and qualities of fermentation. Fermentation is a step in creating yeast breads and baked goods where the yeast is allowed to leaven the dough. Other baking equipments include dough proofer (a warming chamber used in baking that encourages fermentation of dough by yeast through warm temperatures and controlled humidity), dough retarder (a refrigerator used to control the fermentation of yeast when proofing dough) and couche (pronounced koosh, or bakery couch, or proofing cloth - a banneton substitute - to proof dough for longer loaves, such as baguettes or batards).
