I have ordered 3 bannetons from this seller. They are well made, odorless and I used them without the liners to get the design on my bread. I highly recommend these baskets.
Many bannetons I have investigated appear overly expensive and poorly made, perhaps to cash in on the growing popularity of homemade bread over the past year. I have round ones, but wanted to try making oval loaves. The 10-inch oval proofing baskets from Made Terra fit the bill. The baskets are sturdily made with clean, smooth material. The fabric liner is easy to coat with flour and releases the dough nicely. The scraper is a nice add-on feature; i did not really need it, but one can always use an extra. I also appreciate that the vendor claims to support small-scale indigenous producers, which is a plus, in my view.
THEY ARRIVED VERY QUICKLY AND IN GREAT CONDITION. THEY PERFORM GREAT WITH THE LINERS THAT CAME WITH THEM. I HAVE TRIED USING THEM WITHOUT THE LINERS, BUT I HAVE OCCASSIONALLY NOTICED A THREAD-LIKE PIECE OF RATTAN LOOSLY ATTACHED TO THE BASKET. OTHER THAN THAT, PRISTINE CONDITION. I FEEL THAT I CAN SNIP THE THREAD AND YES, I AM STILL GOING THROUGH “CONDITIONING”. WITHOUT THE LINERS, THE BREAD IS STILL STICKING, BUT IT IS A DECREASING PROBLEM. I LIKE THE PATTERN WHEN THE LINERS ARE NOT USED, AND I RECOMMEND THEM.
These baskets do make a nice pattern on your bread, but the bread will stick to them until the basket is fully conditioned. I am in the process of conditioning mine so cannot say how long it takes or whether it will be possible to use the basket without a coating of flour, which is the goal of conditioning.
Both baskets are very well made. I have only used the round bowl so far but it held the rice flour well, and the dough came out of the basket without sticking. The baskets seemed small but the round one is actually the perfect size for a 400 gm flour sourdough recipe. They also arrived quicker than expected. I ordered 2 sets as I plan on using one as an Easter basket for my daughter.
